Weekly Meal Plan: 2/12/18

Weekend Recap

We finally got some warm-ish – we’re talking temps in the 30’s here – weather over the weekend, which melted some of the foot of snow we received last week. Let’s hope this trend continues!

On Saturday, we met with our accountant to go over all of our 2017 documentation, and to talk a little bit about planning for 2018. Afterwards, we got breakfast at a nearby restaurant that we hadn’t tried before, then picked up a few cheap reads at a library book sale. (Seven books for $2.50!)

Yesterday I ran some errands, including a stop to our library to pick up a book I requested after hearing the author interviewed on Katie Couric’s podcast, When: The Scientific Secrets of Perfect Timing. I found their discussion about “chronotypes” fascinating, and I’m very excited to read this book. While I ran errands, my husband took our daughter and one of her friends to Skyzone and out for lunch.

The Week Ahead

It’s a full work and school week for my family. I’ll be working five days – two at Skidmore and three at Union. My daughter has gymnastics Wednesday evening, so no romantic Valentine’s Day plans for us! (Although we do typically exchange gifts of candy.) My daughter has an activity with her Brownie troop on Saturday, and on Sunday, my husband’s parents are coming up from New Jersey for a visit. They usually spend the afternoon with us, and take us out for lunch and/or dinner.

Weekly Meal Plan

  • Monday:┬áTacos/taco salads
  • Tuesday:┬áChicken with Spinach and Mushrooms (from Real Simple Dinner Tonight: Done) w/ pasta
  • Wednesday: Leftovers
  • Thursday: Spinach pie from Trader Joe’s w/ Israeli cous cous
  • Friday: Pizza w/ frozen veggies
  • Saturday: Leftovers
  • Sunday: Dinner w/ my in-laws
